Ingredients:
- Rice - 1 cup
- Grated Carrot - 1/2 cup
- Lemons - 2
- Peanuts - 1 tbsp
- Cashews - 1tbsp
- Salt
- Water -2 cups
For Seasoning:
- Channa dal - 1tbsp
- Urad dal - 1 tbsp
- Musturd seeds - 1 tsp
- Turmeric - 1/2 tsp
- Hing - 1/4 tsp
- Green or red chillis - 3
- Oil - 4 tbsp
- Curry leaves
Method:
- Wash rice and drain. Add water to the rice and cook.
- Once the rice is cooked take it into a big vessel.
- Take 1 tbsp oil in a pan and fry cashews and peanuts into golden brown colour and keep it aside.
- Heat 3 tbsp oil in a pan and add channa dal, urad dal, musturd seeds, turmeric, hing, chillis and curry leaves. When it splutters, add grated carrot and fry for 5 min on medium heat. Add this to boiled rice. Add salt, lemon juice and mix well.
- Garnish with cashews and peanuts.
