Carrot Lemon Rice



Ingredients:


  • Rice - 1 cup
  • Grated Carrot - 1/2 cup
  • Lemons - 2
  • Peanuts - 1 tbsp
  • Cashews - 1tbsp
  • Salt
  • Water -2 cups
For Seasoning:

  • Channa dal - 1tbsp
  • Urad dal - 1 tbsp
  • Musturd seeds - 1 tsp
  • Turmeric - 1/2 tsp
  • Hing - 1/4 tsp
  • Green or red chillis - 3
  • Oil - 4 tbsp
  • Curry leaves
Method:

  • Wash rice and drain. Add water to the rice and cook.
  • Once the rice is cooked take it into a big vessel.
  • Take 1 tbsp oil in a pan and fry cashews and peanuts into golden brown colour and keep it aside.
  • Heat 3 tbsp oil in a pan and add channa dal, urad dal, musturd seeds, turmeric, hing, chillis and curry leaves. When it splutters, add grated carrot and fry for 5 min on medium heat. Add this to boiled rice. Add salt, lemon juice and mix well.
  • Garnish with cashews and peanuts.
