Ingredients:
- Bottle gourd - 1 cup
- Pumpkin - 1 cup
- Sweet potato - 1 cup
- Lady finger - 6 small
- Carrot - 1/2 cup
- Drumstick - 5 pieces
- Green chillies - 3
- Tamarind - big lemon size
- Rice flour - 2 - 3 tbsp
- Jaggery - 1/2 lemon size
- Salt - to taste
- Turmeric - 1/4 tsp
- Coriander leaves -2 tbsp for garnish
For Seasoning:
- Whole red chillies - 2
- Mustard seeds - 1 tsp
- Jeera - 1/2 tsp
- Methi seeds - 1/4 tsp
- Oil - 1 tbsp
- Hing -pinch
- Curry leaves - few
Method:
- Soak tamarind in 1 cup of hot water for about 10 minutes. Extract the juice and keep it aside
- Clean and chop all the vegetables into big chunks, slit green chilles
- Take vegetables, 2 1/2 cups of water, turmeric, green chillies and 1 tsp of salt in a vessel and boil until cooked but not too soft
- Add tamarind juice, jaggery and cook for 5 minutes
- Add little water to rice flour and mix without lumps. Add this to pulusu and let it boil for 5 more minutes
- Heat oil in a small pan, add seasoning items and when they splutter, add to the above mixture
- Garnish with coriander leaves
- Serve with rice and mudda pappu
