Vegetable pulao



Ingredients:

  • Rice - 1 cup
  • Onion -1 medium
  • Mixed vegetables - 1 cup ( potato, carrot, beans, cauliflower, peas)
  • Chopped capsicum - 1/4 cup
  • Soya chunks - 1/4 cup
  • Bread - 1 slice
  • Paneer - 1/4 cup
  • Cloves - 6
  • Elachi - 5
  • Cinnamon - 1" stick
  • Bay leaf - 1
  • Ginger garlic paste - 1 tbsp
  • Turmeric - pinch
  • Garam masala - 1 tsp
  • Green chilli -2
  • Ghee - 2 tbsp
  • Cashews - 10
  • Water - 2 1/4 cups
  • Mint leaves - few
  • Oil
  • Salt to taste

Method:

  • Take ghee in a pan and fry cashew nuts and chopped capsicum seperately and keep aside
  • Cut the bread and paneer into cubes, deep fry them
  • Take little oil into a pan. When oil is heated, add cloves, elachi, cinnamon, bayleaf and fry for 1 min
  • Now add onions and fry. When onion turns to brown add ginger garlic paste, tumeric, chillies, vegetables, washed soya chuncks and mint leaves
  • when vegetables are half cooked add rice and fry for 1 min.
  • Add water, salt and garam masala and cook the mix for about 20 minutes
  • When rice is cooked, add fried capsicum, cashew, bread and paneer cubes
