Idli


Ingredients:
  • Urad dal - 1 cup
  • Idli rava - 2 cups
  • Ghee - 1 tbsp
  • Salt to taste
Method:

  • Soak Urad Dal and idli rava seperately for 4 hours
  • Wash urad dal and grind it to a smooth consistency
  • Wash the idli rava thoroughly and drain the water completely
  • Take a fistful of idli rava , squeeze the water out and put it another vessel,Repeat it till you squeeze out all the water
  • Add urad dal paste to rava, add salt and mix well
  • Place the mixture in a warm place overnight to let the idli mixture ferment
  • By next day morning mixture will rise to at least double the volume after fermentation. Mix the batter well with laddle
  • The batter is now ready to make idlis. Grease idli plates with some ghee and fill with batter.
  • Steam cover for about 10-12 minutes, soft and fluffy idlis are ready
  • Serve hot with dollop of ghee, sambar and chutney

Tip:

For soft and fluffy idlis add some puffed rice while grinding urad dal
